1/4 c Oil
2 c Minced onion
2 Garlic cloves
2 lb Lean ground beef
2 cn Mexican tomatoes
1 cn Black beans
2/3 c Chopped peanuts
4 tb Tomato paste
3 tb Chili powder
Salt & black pepper
1 ts Cumin seed
Hot pepper sauce
Chopped peanuts & grated cheese
Saute onion & garlic in hot oil in Dutch oven over medium-high heat
until tender. Add beef & brown. Stir in tomatoes, beans, peanuts,
tomato paste, chili powder, salt, black pepper, cumin & hot sauce.
Reduce heat. Simmer until thickened. Stir occasionally. Serve topped
with peanuts & cheese.
Approximately 10-12 minutes.
