Mustard Pear Pickles

1 c Flour, all-purpose
4 c Water
1 qt Vinegar, white 1 3/4 c Sugar
2 tb Salt
1 ts Turmeric
1 tb Celery seeds
1 tb Mustard seeds
2 qt Pears; peeled and chopped
2 c Onion; chopped
7 Green peppers; cut into small strips

Stir together flour and water. Combine flour mixture with next 6 ingredients in a saucepan. Bring to a boil, and simmer 4 minutes, stirring constantly.

Combine pears, onions, and peppers in a large saucepan or Dutch oven. Stir in vinegar mixture; bring to a boil. Cook 4 minutes, stirring constantly.

Spoon mixture into hot sterilized jars, leaving 1/8" headspace. Adjust lids and process 10 minutes in a boiling-water bath.
