Polenta Doves

6 Doves -- (6 to 8)
1/4 cup Flour -- mixed with
1/2 cup Polenta (cornmeal)
1/4 cup Rendered salt pork
1/4 cup Water
1/2 teaspoon Dried savory
1/2 teaspoon Ground ginger


Roll birds in flour-polenta mixture. Brown quickly in drippings in a Dutch oven. Add enough water to keep from sticking, about 1/4 cup, and simmer, covered, for 30 minutes. Sprinkle on savory and ginger, and continue to cook, basting frequently, for another 30 minutes. This recipe yields 3 to 4 servings.
