Cabbage with Meat Sauce
1 lb Pork sausage
1 ea Green pepper -- chopped
1 c Chopped onion
1 c Tomato juice
1 cn Tomatoes -- 14 1/2 oz diced with liquid
2 tb Fresh oregano -- or 2 tsp. dried
1/4 ts Salt
1 ds Pepper
1/4 c Butter or margarine
1 md Head of cabbage -- thinly sliced
In a skillet, cook sausage, green pepper and onion until the sausage is browned; drain. Stir in the tomato juice, tomatoes, oregano, salt and pepper; simmer for 1 hr. Melt butter in a dutch oven; saute cabbage over med. heat until tender, about 15 min. Transfer to serving platter; top with the meat sauce. Yield: 4 to 6 servings.
