Confetti Bean Chili

1 lg Onion, chopped
2 cn Chicken broth
2 Cloves garlic, minced
3 tb Chili powder
1 1/2 ts Ground cumin
1/2 ts Dried oregano
1 lb Carrots, sliced
1 lb Red potatoes, cubed
2 cn (14 1/2 oz each) diced tomatoes, undrained OR 3 c Diced fresh tomatoes
15 oz Can black beans *
15 oz Can kidney beans *
15 oz Can garbanzo beans * 2 1/2 c Water


* Rinsed and drained


In a Dutch oven, simmer onion in broth for 5 minutes. Add next six ingredients: bring to a boil. Reduce heat. Cover, simmer 10 minutes. Add remaining ingredients. Cover simmer 20 minutes.
