Braised Red Cabbage

2 tb Butter or margarine
1 md Onion, sliced
1 2 1/2-lb head red cabbage, quartered, cored, & cut into 1/2-inch-thick slices
1 lg Cooking apple, peeled, cored, and sliced
1/2 c Water
1/4 c Red-wine vinegar
1/4 c Sugar
1/2 ts Salt
1/4 ts Ground black pepper


In 5-quart Dutch oven or kettle, melt butter over medium heat. Add onion and saute 5 minutes. Stir in cabbage, apple, water, vinegar, sugar, salt, and pepper. Cover, increase heat to high, and heat cabbage mixture to boiling, stirring occasionally. Reduce heat to low and simmer mixture 45 minutes or until cabbage is tender, stirring occasionally.


Spoon cabbage mixture into serving dish. Or when made ahead, cool cabbage mixture and transfer to a microwave-safe container. Cover and refrigerate until ready to reheat.
