7 pounds Raccoon -- fat removed, cut into 8 to 10 pieces
1 cup Flour -- seasoned with
2 tablespoons Salt -- and
1/2 teaspoon Freshly-ground black pepper
4 tablespoons Butter
2 cups Broth
Roll meat in seasoned flour, and brown in hot butter in a heavy Dutch oven. Add broth, cover, and simmer for 2 hours, or until tender.
This recipe yields 8 to 10 servings.
