Fruit Pasta Salad

8 oz Cappeletti, ditali or other pasta
2 1/2 qt Boiling water
1 tb Cooking oil (opt.)
2 ts Salt
14 oz Pineapple tidbits, drained
1 To 2 fresh oranges, peeled and cut up
1 1/2 c Seedless green and red grapes
1 Fresh peach, peeled and cut up (if available)
1 To 2 banana, sliced


Dressing:
3/4 c Plain yogurt
1/3 c Salad dressing or mayonnaise
1/4 c Icing (confectioner's)sugar
1/2 ts Finely grated lemon rind
1/8 ts Salt (scant)

Cook pasta in boiling water, cooking oil and salt in uncovered Dutch oven until tender but firm, about 6 to 8 minutes. Drain. Rinse with cold water. Drain well. Return pasta to pot.


Add pineapple, oranges, grapes and peach.

Add banana just before adding dressing.

Dressing: Mix all ingredients together Pour over salad. Toss. Serve in bowl. Makes about 6 1/2 cups salad.
