Ginger Applesauce

10 medium granny smith apples *
2 2 inch cinnamon sticks
1 cup apple juice
1 teaspoon grated lemon zest
1/3 cup packed brown sugar
1 1/2 tablespoons fresh ginger
1/4 teaspoon grated nutmeg


* Granny Smith apples should be pared, cored and coarsely chopped.


Place apples, cinnamon, apple juice and lemon zest in a large saucepan or Dutch oven. Simmer covered, stirring occasionally, over medium low heat until apples are soft, 20-25 minutes.


Stir in sugar to taste, the ginger and the nutmeg. Cook until sugar is dissolved and sauce thickens, about 5 minutes. Serve warm or cold. Remove cinnamon sticks just before serving. Makes about 6 cups.
