Jambalaya

1 Tbsp. lard
1 tsp. flour
2 large tomatoes (or 1/2 can)
1 cup uncooked rice
1 chopped onion
1/2 chopped green pepper
Bit of garlic salt, pepper and red pepper
Chopped Shrimp, ham, Oysters or whatever

In an iron Dutch oven brown onions in lard then stir in flour. Next the chopped tomatoes, Shrimp (or ham or whatever) and let them cook while you stir carefully. Add 2 cups boiling water and let simmer for a while. Wash the rice and add to the pot - stir once and cover. Cook until done.
