1/4 pound lean turkey italian sausage -- cut into 1/4 inch slices
2 1/4 cups water
1 8 ounce package seasoned spanish yellow rice mix with saffron
1 14 ounce can artichoke hearts -- drained and quartered
1/2 cup green giant frozen sweet peas
1 14.5 ounce can diced tomatoes with garlic or diced tomatoes with italian-style herbs -- undrained
1/2 pound shelled deveined uncooked medium shrimp
Spray 12-inch nonstick skillet or Dutch oven with nonstick cooking spray. Add sausage; cook over medium heat until browned, stirring occasionally. Drain if necessary.
Add water. Bring to a boil. Stir in rice; boil 1 minute. Reduce heat to low; cover and simmer 15 minutes.
Stir in artichokes, peas, tomatoes and shrimp. Return to a boil. Reduce heat to medium. Cover; cook 8 to 12 minutes or until peas and rice are tender, and shrimp turn pink, stirring occasionally.
