1 c. buttermilk
2 T salad oil or melted shortening
1 c. flour
1 T sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
oil or crisco for greasing Dutch oven
While mixing batter heat coals for heating Dutch Oven. Beat egg; add remaining ingredients in order listed and beat until smooth. Grease heated Dutch oven with oil or crisco. To test oven, sprinkle, carefully, with a few drops or water. If bubbles skitter around, heat is just right.
Pour batter from tip of large spoon or from pitcher onto hot Dutch oven. Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break. Bake on other side until golden brown.
