Another Jambalaya recipe

Serves 10 campers.

1 lb sausage sliced
1 cup chopped green peppers
1 cup diced celery
1 cup chopped onions
1/2 cup chopped green onions
1 tsp garlic power
2 tbs butter
1 cup uncooked rice
2 cups water
1 can of tomatoes
14 oz 1 lb crawfish tails or shrimp or chicken
2 tsp Creole seasoning or salt & pepper red & black to taste


Preheat Dutch oven & add butter. Sauté Sausage, green peppers, onions & celery in butter until tender but not brown. Stir in remaining ingredients and bring to a boil. Stir once or twice, reduce heat to a simmer. Cover and cook 20 minutes until rice is tender.
