West Indies Hot Bread

2 cups yellow cornmeal
1/2 cup granulated sugar
2 cups all purpose flour
3 tablespoons butter, softened
1 jalapeno pepper, chopped
1 cup shredded cheddar cheese
2 cups milk
1/2 cup roasted garlic covered with olive oil
2 red onions, chopped
1 sweet red pepper, chopped
2 eggs
1/4 cup vegetable oil


Combine dry ingredients in a medium mixing bowl. Stir in remaining ingredients except oil. Heat Dutch oven with the oil until very hot. Pour batter and bake for 40 to 50 minutes or until done.
