Spicy Applesauce Cake with Caramel Icing

Cake:

2 cups flour
1/2 cup semisweet chocolate chips
1 Tbs. Baking powder
1 cup raisins
1 1/2 tsp. Baking soda
1/2 cup shortening
2 cups applesauce
2 eggs
1 tsp. Salt
1 1/2 cups sugar
1 tsp. Each-ground cloves, cinnamon, nutmeg, allspice


Line Dutch oven with parchment paper. In a mixing bowl combine dry ingredients. Add shortening, applesauce and eggs. Beat until well mixed. Stir in chocolate chips, walnuts and raisins. Pour into Dutch oven. Sprinkle top with 1/2 cup semisweet chocolate chips and 2 Tbs. Brown sugar. Cook with 10 coals on bottom and 15 on top for 30-35 minutes. Remove from bottom coals and bake for 10-15 minutes more.

Caramel icing:
Place water in dutch oven then put a small dutch inside over simmering water, then: Heat 1/4 cup brown sugar, 4 tbsp. Cream or half and half, 1/8 cup butter and pinch of salt until sugar is dissolved. Cool to room temperature then beat in 1/2 cup powdered sugar until smooth. Drizzle over cake and sprinkle with 1/2 cup chopped walnuts.
