Beef Casserole (Beef Cubes)

2 pounds beef cubes
salt and pepper -- to taste
1 tablespoon minced onion
2 tablespoons oil
4 medium potatoes -- thinly sliced
1 can cream of chicken soup (10.75 oz.)
3/4 cup milk
3/4 cup sour cream
1 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese
1/2 cup fine dry breadcrumbs

Season meat with salt and pepper. In Dutch oven cook and stir meat in oil till meat is brown. Drain oil.

Add one cup of water and the minced onion to the meat. Heat to boiling. Reduce heat, cover and simmer 1 1/2 hours, adding a cup of
water every 30 minutes.

Pour meat mixture into 9"x13" baking dish. Arrange potatoes over meat.

Combine soup, milk, sour cream, 1 teaspoon salt, 1/4 teaspoon pepper. Pour over potatoes and sprinkle with cheese.

Bake, uncovered, at 350 degrees for 1 hour. Sprinkle with bread crumbs. Bake, uncovered, until potatoes are tender and crumbs are brown about 20-30 minutes.
