Roasted Potatoes

4 pounds of red potatoes, cut in 8ths
2/3 cup of olive oil or equivalent
2 envelopes of onion soup mix

Preheat dutch oven to 450 degrees. Add all ingredients into large plastic bag and shake well to coat potatoes well. Spread potatoes in dutch oven. Bake covered for 60 minutes, stirring twice until tender and golden brown. Will serve 10 hungry scouts.
