Beef Or Pork Stir-fry

4 Tbs. Cornstarch
4 tbs. Soy Sauce
2 lbs. Boneless beef sirloin or pork tenderloin
3/4 cup oil
2 large cloves garlic, minced
4 tsp. Minced ginger
8 cups vegetables, cut up in any combo: Tomatoes Mushrooms Bean sprouts Cauliflower Celery Peppers Onions Zucchini Carrots Broccoli
3 cups chicken or beef broth
8 servings rice

Slice meat into strips 1/4 inch thick, 2 inches long and1/2 inch wide. Mix cornstarch and soy sauce until smooth. In dutch oven, heat 1/2 of oil and add garlic and ginger. When hot, add meat, stirring constantly until done.

Remove. Add rest of oil. Add vegetables, starting with longest cooking ones first. When almost done, return meat to oven. Add broth and stir in soy sauce mixture. Let cook a few minutes to thicken. Serve over rice.
