Shrimp and Crab Meat Fettuccini
1 1/2 sticks butter
3 stalks celery, chopped
1 bell pepper, chopped
1 bunch green onions, chopped
3-4 pods garlic, chopped
1/3 cup flour
1/2 cup water
1 lb. Shrimp, cooked and deveined
1 lb. Crab Meat
4 Tbsp. parsley, chopped
12 oz. package wide egg noodles
1 lb. Mexican Velveeta cheese
1 pint half and half
Melt butter in Dutch oven; saute celery, bell pepper, green onions and garlic for 10 minutes. Add flour and blend well. Add water and blend well. Cook over low heat a few minutes. Add Shrimp, Crab Meat and parsley. Cook 15-20 minutes over very low heat. Prepare noodles and set aside. Add Velveeta cheese (cut into small pieces) to Shrimp mixture. Blend well. Add half and half until desired consistency (may not need whole pint).
Add cooked noodles, blend well. Place entire mixture in casserole dish. Top with Parmesan cheese. Bake in 350 degree oven, uncovered, for 20 minutes or until hot and bubbly.
