Spaghetti Sauce (Easy Low-fat)

2 cans tomatoes
1 can tomato paste
2 onions -- chopped
1 green pepper -- chopped
4 stalks celery -- chopped
1 zucchini -- in bite size pieces
1/2 pound mushroom -- sliced,(1/2 to 3/4)
1 tablespoon black pepper
1 teaspoon salt
1 tablespoon oregano
1 tablespoon basil
2 bay leaves
8 cloves minced garlic
serrano pepper sauce to taste
2 tablespoons sugar

Spray a large pot (dutch oven) with cooking spray and sautee vegetables until tender.

Add spices and tomatoes (chopped up somewhat) and tomato paste.

Simmer until done (I just leave it on the stove for a couple of hours to allow the spices to blend). Serve over cooked pasta (al dente).

Top with freshly grated parmesan cheese if you don't mind the extra fat.
