Potato Salad, Old Fashioned

9 Red Potatoes -- Cubed
1/2 Cup Diced Onion
1/2 Cup Diced Celery
1/4 Cup Sweet Pickle Relish -- Drained
3 Hard-Boiled Eggs -- Chopped
1 Garlic Clove -- Minced
3/4 Cup Low-Fat Sour Cream
1/3 Cup Fat-Free Mayonnaise
2 Tablespoons Chopped Fresh Parsley
1 Teaspoon Dry Mustard
3/4 Teaspoon Salt
1/4 Teaspoon Pepper

Place potato in a Dutch oven; cover with water, and bring to a boil. Cook 8 minutes or until tender. Drain; place in a large bowl. Add onion and next 4 ingredients (onion through garlic); toss gently. Combine sour cream and remaining ingredients; stir well. Pour over potato mixture; toss gently to coat. Cover and chill.
