Spicy Bean and Shrimp Dinner 1 c Uncooked orzo or rosamarina
1/2 c Sliced green onions
1 cl Garlic, minced
1/4 ts Crushed red pepper flakes
8 oz Cleaned medium shrimp
15 1/2 oz Can pinto beans, rinsed
9 oz Pkg frozen cut broccoli, thawed
2 tb Olive oil
1 tb Lemon juice
1 ts Dried basil leaves
2 tb Parmesan cheese
Cook orzo as directed on package. Drain and keep warm. Spray large nonstick saucepan or Dutch oven with nonstick cooking spray. Heat over medium high heat until hot. Add onions, garlic, red pepper flakes and shrimp. Cook and stir 2-4 minutes or until shrimp turns pink. Add cooked orzo and remaining ingredients except cheese; mix well.
