Orange Beef and Wild Rice
3/4 lb Top round steak; 1/2" cubes
1 Onion; chopped
2 Carrots; sliced
1/2 lb Mushrooms; sliced
2 Cloves garlic; finely chop'd
1/2 ts Dried thyme
1 ts Grated orange zest
1 c Orange juice
1 cn (13 3/4 oz) reduced-sodium - beefbroth
1 pk (6 oz) wild and white rice - pilaf
1/4 c Chopped parsley
1) Brown beef in nonstick dutch oven. Add onion, carrot, mushrooms; cook 8 minutes. Add garlic; cook 1 minute. Add thyme, zest, juice, broth, rice with seasonings.
2) Simmer, covered 30 to 35 minutes. Stir in parsley.
