Garlic Mashed Potatoes
2 lb Baking Potatoes; peeled; cut into 2-inch chunks
6 ea Garlic Cloves; peeled
1 ea Tb Olive Oil
1/2 t Pepper
PLACE potatoes and garlic in large pot or Dutch Oven and cover generously with water. Bring to a boil and cook until potatoes are tender. LIFT potatoes and garlic out of water, reserving cooking liquid. Mash potatoes and garlic with potato masher or pass through food mill (never "mash" potatoes with a food processor). Slowly beat in oil and 1/2 to 3/4 cup potato cooking liquid until you reach desired consistency. Add pepper and salt to taste. SERVES 6.
