Sweet and Sour Brisket

2 1/2 lb To 3 lbs. brisket of beef, trimmed of excess fat
1 tb Vegetable oil
1 lg Onion chopped
3 cl Garlic, minced
1/3 c Cider vinegar
1/4 c Brown sugar 1 1/4 c Tomato puree
2 c Beef broth
2 c Water
Salt to taste
Fresh ground pepper to taste
1 lb Carrots, peeled, thickly slice
4 Celery ribs, washed and thickly sliced

Brown the brisket 4" from the high flame of a broiler or over a very hot grill.Set aside.. Meanwhile in a large iron skillet (that has a lid) or a dutch oven large enough to hold the brisket,heat the oil over medium high heat.When hot,add the onion and stir until they start to brown.Add the garlic and stir for 30 seconds.. Mix in the vinegar,brown sugar,tomato puree,beef broth,water,salt and pepper.Bring to a boil.Place the brisket in the liquid along with any liquid that has collected around it.Cover and simmer for 1 hour,turning occasionally.Add the carrot and celery and simmer about 1 more hour,until fork tender.. Slice the brisket against its grain.Skim the fat from the surface of the gravy and ladle over sliced brisket..Makes 6 to 8 servings.
