Italian Beef Pot
1 3 lb. boneless center-cut chuck roast
1 Green bell pepper; sliced into 1/4 inch slices
1 md Yellow onion; sliced into 1/4 inch rings and separated
2 pk Italian dressing seasoning mix
2 cn Lemon-lime soda or light beer
Cut the roast into 4 equal portions and set them in the bottom of a large dutch oven.
Sprinkle the Italian seasoning over the top of the meat, followed by the seasoning mix and then pour the soda or beer over top of it all.
Cover and bake in a 325 degree oven for 2 1/2 to 3 hours or until tender to touch with a fork.
Remove from the oven and let the roast settle for 15 minutes before serving.
