Beef and Lima Bean Stew

4 tb Vegetable Oil 2 1/2 lb Lean Beef Cubes
1 Clove Garlic -- minced
1 lg Onion -- diced
1/4 ts Dried Thyme
Salt And Pepper -- to taste
1 cn (12 Oz) Beer
2 c Baby Lima Beans, Fresh Raw OR 1 pk Baby Lima Beans, Frozen

Place oil in a Dutch oven. Add beef cubes and brown. Add garlic, onion, and seasonings. Saute for 5 minutes more. Add beer, cover, and simmer for 2 hours. Or until meat is just about tender. Add water if necessary, but only small amounts at a time, since a fairly concentrated essence is desired. After the 2 hrs, add lima beans and continue cooking another half hour. Serve over steaming hot rice. Yield: 4 servings.
