Ham and Sweet Potatoes In Orange Sauce
3 tb Vegetable Oil
1 tb Butter or Margarine
8 oz Frozen Small White Onions
1 lb Boiled or Baked Ham, (cut into 3/4" cubes, 3 c)
1 lb Sweet Potatoes, peeled (cut into 3/4" cubes, 3 c)
3 tb All Purpose Flour
3 c Chicken Broth
3/4 c Orange Juice
1 ts Grated Orange Rind
1/4 ts Black Pepper
2 c Fresh Broccoli Florets
Heat the oil and butter in a 5 qt dutch oven over moderately high heat for 2 minutes. Add the onions and saute stirring occasionally for 8 to 10 minutes or until golden brown. Transfer to a large plate.
Add the potatoes and saute stirring occasionally for 5 minutes or until lightly browned. Transfer to the plate.
Add the ham to the dutch oven and saute stirring occasionally for 5 to 8 minutes or until lightly brown. Transfer to a separate plate.
Reduce the heat to moderate. Whisk the flour into the ham drippings and cook stirring constantly for 2 minutes. Gradually whisk in the chicken broth and orange juice and cook stirrin constantly for 3 to 5 minutes or until slightly thickened. Stir in the orange rind and pepper.
Return the potatoes to the dutch oven, bring to a boil over moderate heat, cover and cook for 10 minutes or until almost tender. Add the sauted ham and onions and the broccoli, return to a boil. Cover and cook for 10 minutes or until all the vegetables are tender and the ham is heated.
