Red Bean Stew

1 pound reduced fat sausage
1 onion -- chopped
1 quart whole tomatoes
1 teaspoon salt
1 bay leaf
1 1/2 teaspoons granulated garlic
1 teaspoon dried thyme
3 large or 4 medium red potatoes -- peeled and diced
4 cups precooked red bean -- canned may be used

In a large Dutch oven, brown meat and drain fat. Add onion, tomatoes (I chop them in the food processor first), salt, bay leaf, garlic, thyme, and diced potatoes. Cook until vegetables are done, 30 minutes or more. Add red beans and simmer to blend flavors for 10 minutes.
