Seafood Gumbo

1 1/2 to 2 lbs. fresh Shrimp
1/2 tsp. Crab boil
2 Tbsp. bacon drippings
2 Tbsp. flour
1 large onion, chopped medium fine
1 cup cooked ham, chopped
2 lbs. fresh/frozen okra, chopped
3 stalks celery, chopped
2 Tbsp. chopped parsley
1 large can tomatoes
1 large green pepper, chopped
1 lb. Crab Meat
1 clove garlic, mashed
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. thyme
1/4 tsp. oregano
2 bay leaves

Cover cleaned Shrimp with water. Add Crab boil. Cook until Shrimp are tender, about 10 minutes. Drain and save water. Peel Shrimp and reserve. Cook in Dutch oven, make paste of bacon drippings and flour. Add onion; saute' until transparent. Add ham and okra. Cook for 10 minutes over medium heat, stirring constantly. Add Shrimp water, celery, parsley, tomatoes, green pepper, Crab Meat, garlic, salt and pepper. Simmer for 1 hour. Add thyme, oregano, bay leaves and Shrimp. Cook for 10 minutes. Serve over fluffy rice. Can be frozen.

Yields: 8-10 servings.

(May use Lobster and Clams instead of Shrimp if desired.)
