2 tablespoons vegetable oil
1 large onion -- diced
1 large green pepper -- diced
2 tablespoons chili powder -- up to 3 tbs
1 medium yellow squash -- sliced
16 ounces firm tofu -- drained and cut into cubes
28 ounces stewed tomatoes
14 ounces cooked kidney beans
14 ounces cooked black beans
1 teaspoon sugar
1 cup water
Put oil in a Dutch oven and saute onion and green pepper. Stir in chili powder. Add squash, tofu, tomatoes, beans and sugar. Add water. Heat to boiling, reduce heat and simmer uncovered for 20 minutes.
