Easy Pumpkin Cake
2 (16 oz.) cans pumpkin
11/2 cup sugar
1 can evaporated milk plus enough milk to make 2 cups
1 yellow cake mix, dry
1 stick margarine, sliced
1 cup chopped pecans (optional)
Mix the eggs, pumpkin, sugar and evaporated milk in a large bowl and pour into greased 9 x 13"pan (if cooking in outdoor oven) or a Dutch Oven. On top, sprinkle the cake mix, margarine and pecans. Bake at 350°F for 55 - 60 minutes. Serve with whipped topping if desired.
