1 cup (4 ounces) shredded Monterey Jack cheese
8 (8") fat-free flour tortillas
2 cups shredded cooked turkey (about 8 ounces)
1 cup cranberry-orange crushed fruit (such as Ocean Spray)
Sprinkle 1/4 cup cheese over each of 4 tortillas; top each with 1/2 cup turkey, 1/4 cup fruit, and 1 tortilla. Heat a large nonstick skillet over medium-high heat. Place 1 quesadilla in pan; cook 5 minutes on each side or until tortillas are crisp. Set aside and keep warm. Repeat procedure with remaining quesadillas. Cut each quesadilla into 6 wedges. A Dutch Oven lid can also be used - just turn it over so you have a flat surface.
Yield: 8 servings (serving size: 3 wedges)
