Hot Milk Sponge Cake

Preheat oven to 325. (or preheat a 10 inch Dutch Oven)

In a mixing bowl, beat well, 2 eggs.

Add 1cup sugar and 1 tsp. vanilla. Beat until light.

Combine separately, 1 cup flour, 1tsp. baking powder, 1/4 tsp. salt.

By hand, fold dry ingredients into egg mixture.

Bring to a boil in a small saucepan, cup milk, 1 tsp. butter (or use microwave, although you're unlikely to fine one on a campout).

Add slowly to batter, stirring gently. Pour into well-greased and floured 7"x12" , or 9"x9" (or 9" round cake pan). You can put the cake pan in the Dutch Oven, or put the batter directly into the Dutch Oven.

Bake for 30 - 35 minutes.
